When you find yourself with extra strawberries or rhubarb or peaches or plums or apples or, well, I could go on, one smart thing to do is walk over to the kitchen, and see if you have flour, butter, and sugar around.
This cherry galette is the “oh, I just threw this on and somehow accidentally look fabulous” in the wardrobe of cherry desserts.
I’m on a rustic fruit dessert kick. So it was only a matter of time until I got around to peach cobbler.

Galettes are pretty much my favorite form of pie.
They’re rustic and are seldom perfectly symmetrical. And somehow that imperfection makes them look prettier to me.
Strawberry shortcake is one of those classics that’s tough to beat. I make it at least once every summer when strawberries are at their peak of ripeness and juiciness.
